Healthy and Quick Lunch-Box Recipes

Kids lunch box recipes:
Feeding your little ones healthy food is a tough task. Kids just tend to prefer junk and processed food. So, it becomes harder for a mother to pack a nutritious meal into their lunch boxes before they head off to school. Make sure that the snacks you send for kids to eat at school are yummy and healthy. Whenever you pack kids tiffin, make sure it has to be healthy and nutritious. We are going to help you with lunch box ideas with plenty of vegetables that are unique, delicious and healthy.

Vegetable Macaroni
Ingredients and Process:
1. Boil 2 cups of water; add 1 tsp salt and 1 tsp oil.
2. Add 1 cup Macaroni, boil for 10 minutes. Drain the water and wash with cool water.
3. In a separate pan, add 2 tbsp of oil, ½ tsp chopped garlic, ¼ tsp chopped green chilli, ¼ cup chopped tomatoes, capsicum, onion and carrot. Cook all these items until soft and tender.
4. Now add 1 tbsp tomato ketchup and Macaroni, stir for 5 minutes. Garnish with coriander and mint leaves.

Vegetable Fried Rice
Ingredients and Process:
1. In a pan, put 1 tbsp of oil, ½ tsp garlic, 2 tbsp chopped onion, ¼ tsp green chilli, ¼ cup boiled mixed vegetables (peas, carrot, corns, beans), saute for few minutes.
2. Now add 1 cup cooked rice, salt as per taste, ¼ tsp black pepper. Mix well. Garnish with coriander leaves.

Pizza Sandwich
Ingredients and Process:
1. Take 2 tbsp chopped onion, capsicum, tomato, boiled corns, ¼ tsp oregano, ¼ tsp red chilli flakes, salt as per taste.
2. Take 2 slices of bread and spread some butter, flip it.
3. Spread some pizza sauce and toppings and mozzarella cheese.
4. Brush some butter on the pan and place the pizza on pan.
5. Cover the pan and cook for 1 minute in a medium low heat.

Vegetable Cutlet
Ingredients and Process:
1. Mix ½ cup boiled mashed potato, 2 tbsp chopped capsicum, onion, bread crumbs, 2 tbsp grated carrot, salt as per taste, ¼ tsp garam masala powder, ¼ tsp white pepper powder.
2. Mix all these ingredients and make a cutlet shape.
3. In a separate pan, add 1 tbsp of oil.
4. Place the cutlet in oil on a medium flame and fry until golden brown.
