Relish lavish desserts at Christmas

People decorate their homes with lights, Christmas trees and much more and visit family or friends to exchange gifts on Christmas day. Christmas is festival of merrymaking and spreading joy all around. Christmas is incomplete without cakes, cookies and a number of sugary delights. There are different types of desserts that one can try making this Christmas.

1. Christmas Safari
Ingredients: 2 egg, 1 cup granulated sugar, 1/3 cup cocoa powder, 2 scoops vanilla ice cream, 1/2 cup all purpose flour, 1 tsp vanilla extract, 1/4 tsp salt, 1/4 tsp baking powder.
For Frosting: 1 cup castor sugar, 1 tbsp honey, 3 tbsp cocoa powder, 3 tbsp butter, 1 tsp vanilla extract.

Method:
Step 1: Preheat oven at 175 degree Celsius. In a large saucepan, melt half a cup of butter over medium flame. Remove from heat and stir in sugar, eggs and vanilla extract. Mix the ingredients well.
Step 2: To this mixture, add cocoa powder, flour, baking powder along with salt and whisk it. Make a smooth batter and spread it in a greased and flour dusted square baking pan. Bake the batter for 25-30 minutes.
Step 3: For Frosting, combine butter, cocoa powder, honey, vanilla
extract and castor sugar in a bowl. Stir until it becomes smooth. Frost the brownies while they are warm. Serve hot brownies with a scoop of
vanilla ice cream.

2. Christmas Fantasy
Ingredients: 100 gm chopped dark chocolate, 10 gm cocoa powder, 1 tsp vanilla extract, 65 gm cake flour, 200 gm white chocolate, edible food color as required, 1/2 cup cubed unsalted butter, 65 gm sugar, 2 egg, 1 pinch salt, 125 gm heavy cream.
For Garnishing: Colorful sprinkles as required.
For Toppings: 2 tsp green tea powder, 1/2 tsp peppermint extract.

Step 1: Melt chocolate and butter in a large bowl, add sugar and cocoa powder into the mixture. Whisk in vanilla extract and eggs, one at a time, beat well after each addition. Incorporate flour and salt in this batter, and mix again.
Step 2: Preheat oven at 160 degree Celsius and grease mini cupcake pan. Put the batter in piping bag and pipe until cupcake pan is ¾ ways full. Bake for 15 minutes, and leave it to cool.
Step 3: To prepare the ganache, melt white chocolate and cream together. Keep aside to cool. Then use electric beater to whip the mixture half way until soft.

Step 4: Divide ganache mixture into 3 parts. Put 1/5 original chocolate cream mixture in one part, 2/5 peppermint and 2/5 green tea powder in third part. Add green food color to the ganache mixture. Whip each part to stiff peaks and fill it into 3 different piping bags, fitted with 3
different tips.
Step 5: Lastly, take a cupcake and top it up with chocolate cream mixture, then with peppermint and third with green tea mixture. Decorate cupcakes with colorful sprinkles and serve.
